There’s no denying it, we Scots love to linger longer around a table especially when food, drink and laughter is involved.

The Spanish have a perfect word for this called ‘sobremesa’ meaning ‘over the table’ and they use this word to refer to the period after a meal when you chat with friends or family and enjoy each other's company. It’s the last course, when guests are served with that “little something extra” and you all continue to eat, drink and chat into the wee hours of the morning.

Remember THAT dinner party where everyone was enjoying delicious food and drink and before you knew it, it was 2am? That’s sobremesa!

DRAMBUIE HONEYED LIQUEUR

Drambuie is a Scottish honeyed whisky liqueur infused with heather honey and is perfect for those occasions where the conversation is flowing, the laughter is hearty and there is no other place on earth you’d rather be.

Drambuie, meaning ‘a drink that satisfies’, can be traced back to the 18th century with Bonnie Prince Charlie and the Battle of Culloden. His apothecary created a secret elixir for him which was then given to the Scottish clan on the Isle of Skye in gratitude for their hospitality, as he awaited safe passage back home.

EAT, DRINK AND SOBREMESA WITH DRAMBUIE

The best part of having loved ones around for dinner is the time spent after the meal, where you, as the host, get to relax and really spend some quality time with those around the table; it’s a time to digest and savour both food and friendship.

Instead of serving coffee and petite fours as the last course of the evening, switch it up with these Drambuie Chocolate Truffles and the Drambuie Iced Espresso. Drambuie is distinctive and flavourful and pairs so well with the deep, dark flavours of the chocolate and coffee.

RECIPES

DRAMBUIE CHOCOLATE TRUFFLES

Ingredients

300g dark chocolate 70% cocoa solids

300ml double cream

50g unsalted butter

3tbsp Drambuie Honeyed Liqueur or more if needed

Method

Break up the chocolate into a bowl and microwave for 45 seconds. Remove and stir. Check to see if it needs a few more seconds, if so, pop in back in for 10-20 seconds and stir again. You want to keep your chocolate smooth and shiny.

In a pan, heat up the cream and the butter. Bring the cream to a rolling simmer and remove from the heat. Add this to your smooth creamy chocolate.

Stir this mixture together.

Add in your Drambuie Honeyed Liqueur. Give the chocolate mix a taste, if you want it stronger, add more.

Leave to cool and then pop in the fridge for at least 4 hours, or overnight if possible.

Shape the truffles by dipping a spoon into hot water and scooping up a spoonful of the set chocolate mixture. Lightly coat your hands in olive oil and roll into small bite sized balls. Place these on baking parchment.

Coat your truffles immediately after shaping. I used cocoa powder, coconut and pistachios (which I rolled into the truffles).

Your truffles will keep for three days in an airtight container in the fridge or freeze them for up to a month (defrost in the fridge overnight).

DRAMBUIE ICED ESPRESSO

I served the truffles with the Drambuie Iced Espresso which is so simple to make and served as a digestif.

Ingredients

50ml espresso or strong cold brew coffee

50ml Drambuie Honeyed Liqueur

Lots of ice

Method

Place all ingredients in a cocktail shaker and give it a really good shake.

Stain into a glass over ice. The coffee foam will naturally form on top creating that lovely colour separation.
