RECIPE : Chorizo Mac n Cheese with 1057 Scottish Cheddar Cheese

The ultimate comfort dish. That dish thats super easy to make, ingredients are always in the back of the pantry or the fridge and it’s just an absolute banging dish when you’ve been out celebrating, come home and are in need of carbs!

RECIPE : CHORIZO MAC N CHEESE WITH 1057 SCOTTISH CHEDDAR CHEESE

I’m talking Macaroni Cheese; Mac n Cheese. Cheese has never been such an important and integral part of a dish as mac n cheese. Here cheese rules and the cheesier the better.

So I went with a superb Scottish Cheddar, 1057 Cheddar Cheese to make this dish super cheese - and to be honest, it could easily have handled more cheese. Yes, half a packet was ample but I’d not question adding in a whole block.

Here is my recipe for my Chorizo Mac n Cheese which pairs perfectly with a pint of Guinness if you are celebrating St Patricks Day this Thursday (17th March 2022).

RECIPE : CHORIZO MAC N CHEESE WITH 1057 SCOTTISH CHEDDAR CHEESE

INGREDIENTS

300g Macaroni pasta

6-8 large slices of chorizo. Add more or less, it all depends on how much you like chorizo

2 spring onions

150ml double cream - add more if you want loads more sauce

100g 1057 Scottish Cheddar Cheese - add more if you want super duper ultimate cheesiness

2 slices of bread, blitzed to make the crumb

Salt and pepper to taste

METHOD

  • Slice up your chorizo into thin strands and lightly fry

  • Slice up your spring onions

  • Grate your cheese

  • Cook off your macaroni pasta until al dente

  • In a pan add the double cream, the cheese and the chorizo. Stir well whilst the cream is warming through

  • Once the cheese has melted into the cream, add the cooked pasta and stir well

  • Split your mixture into two dishes or one large one

  • Top with the spring onion, more cheese and the breadcrumbs

  • Place in a hot oven at 200 degrees for 10-15 minutes until the top is golden brown

This recipe is so easy and versatile. Use gluten free macaroni or switch up your protein ingredient with the likes of lobster for more indulgence or good ol bacon.
