RECIPE : Pea and Mint Soup

PEA AND MINT SOUP RECIPE (makes 2-3 bowls)

INGREDIENTS

3 handfuls of frozen peas

1 handful of mint

8 cloves of garlic

salt and pepper to taste

water

cream for garnish

crispy onions for garnish

Frozen peas are the best to use and you can use them straight from the freezer, no need to defrost.

Peel 8 cloves of garlic and add them to a pot with a splash of oil. Sautee these off until the cloves start to go a little soft.

De-stalk the mint, you only want the leaves. I love the smell of mint. You can either leave these whole or chop them up - totally up to you.

Add the peas to the pot with the garlic and top up with some water. Bring to the boil for a few minutes.

Then its time to blitz the mix. Use a hand blender to blitz the mixture. It should go quite frothy.

Then add in the mint leaves and salt and pepper to taste.

Time of a final blitz until smooth and everything is well blended. Cook for a further few minutes and taste. Season again if necessary.

Swirl in some cream and sprinkle with some crispy onions if you like.
