Detroit Slabshop Edinburgh Review: Frico Crusts, Cookie Slabs & Pizza Heaven

When a pizza joint calls itself Slabshop, you know it’s not messing around. Edinburgh’s Detroit Slabshop delivers thick, pillowy slabs of pizza with frico crusts that crunch, melt, and ooze in all the right places. From cheeky names like the Mac Daddy to warm white chocolate cookie slabs that vanish before the camera clicks, this isn’t just pizza, it’s a full-blown flavour experience. Delivered straight to your door or devoured in-shop, Slabshop is shaking up the city’s pizza scene with unapologetic indulgence.

When I first heard the name Slabshop, my brain went full Rocky Horror - “Come up to the lab and see what’s on the slab!” 🎶 But let’s not get sidetracked by musicals and madness. Edinburgh’s Detroit-style Slabshop is a temple to pizza. We’re talking thick, pillowy crusts that cradle outrageous toppings. Ooozing, melting, and sinking gloriously into that spongey dough base. It’s not just a slice; it’s a slab of pure, unadulterated pizza indulgence.

I’ll be honest, I haven’t stepped foot inside Slabshop on Frederick Street yet, but they did make it to my hoose. And deliver they did. A colossal brown paper bag landed at my door via Deliveroo, bursting with slabs of pizza, saucy wings, dips galore, and wait for it, the pièce de résistance: their slab cookies. Gooey, chunky, and utterly glorious. It was a full-blown feast in a bag, and I devoured every bite like a woman possessed.

What is Detroit-Style Pizza and Why Frico Crusts Matter

So what is a Detroit style pizza? It’s a glorious, carb-laden love letter to crispy edges and cheesy indulgence especially as it comes with a frico crust!

Detroit style pizza is rectangular and baked in deep steel pans producing a thick, airy and focaccia-like crispy base giving that spongey, chewy texture. It’s all about cheese first and sauce last. Cheese is spread edge to edge, then toppings, the tomato sauce often added after baking. But its the frico crust that really sets it apart and makes you crave more. Frico is the crispy, caramelised cheese edges that forms when the cheese melts and burns slightly against the pan walls. It’s lacy, golden and packed with umami. Think of it as the pizza’s crown - crunchy, salty and addictive.

What We Ordered: Slabs, Wings, Whips & Cookies

The Mac Daddy is a full-throttle flavour bomb. Juicy ground beef smothered in molten American cheese, crowned with a golden tumble of crispy onions. It’s like your favourite cheeseburger got reincarnated as a pizza and decided to go big or go home.

The Garlic Bread slab is a golden, buttery beast. Thick, fluffy dough soaked in garlicky goodness and crisped to perfection at the edges. It’s the kind of side that steals the spotlight, begging to be dunked, devoured, and fought over.

The Get Clucked slab is a herby, garlicky celebration of chicken - tender chunks nestled into a thick, golden crust that’s crisp at the edges and soft in the middle. Each bite is a savoury swirl of roasted garlic, fresh herbs, and juicy poultry, making it a cluckin’ good choice for comfort food royalty.

The Buffalo Wings come drenched in fiery, tangy sauce that clings to every crispy crevice, delivering a punch of heat with each bite. Paired with a pot of cool, Creamy Blue Cheese Whip, it’s a flavour clash that hits all the right notes. Think bold, messy, and utterly addictive.

The Truffle Honey Whip is a decadent swirl of sweet and savoury, velvety whipped dip kissed with earthy truffle and golden honey. It’s the kind of indulgence that turns crust-dipping into a full-blown ritual, rich enough to feel fancy and cheeky enough to lick off your fingers.

The White Chocolate Cookie Slab is pure dessert decadence, served warm, it gooey, golden, slightly charred, with molten white chocolate puddled into every soft crevice. It’s thick, chewy, and just the right kind of messy, melting in your mouth while still warm from the oven, like a hug disguised as a cookie. My sincere apologies for not getting any photos of this cookie - it was so good that we devoured it before we realised!

Plenty of new spots ride the hype train, all style and no substance. But not here. At Detroit Slabshop, the food does the talking. No fancy packaging, no curated interiors—just unapologetically good pizza. Thick slabs, golden frico crusts, and puddles of molten cheese doing exactly what they’re meant to: stealing the show. It feels like something fresh is bubbling up in Edinburgh’s pizza scene, and Slabshop’s leading the charge.
