RECIPE - Rosti Eggs Benedict with Scotty Brand Potatoes

Brunch is without a doubt my favourite meal of the day (okay besides dinner) and I personally think the best way to start any day is with eggs; be that boiled, fried, scrambled or poached.

Eggs Benedict or Eggs Benny as they are lovingly known, is a favourite brunch dish for many and you’ll find an Eggs Benny on just about any breakfast/brunch menu in Edinburgh.

However, if you are like me and don’t eat bread, here is a very simple and super easy ‘Food Hack’ on how to have your Eggs Benny and eat your tatties too!

RECIPE FOR POTATO ROSTI EGGS BENEDICT USING SCOTTY BRAND POTATOES

I’m not a gluten freebie or a coeliac, I just try to cut out bread as much as possible, so by replacing the English Muffin with Potato Rosti’s, this little brunch dish gets a makeover and I personally think for the better.

Potato Rosti’s are so easy to make. Ideal for vegetarians and gluten freebies alike, you couldn’t get a quicker easier hack using three ingredients - Scotty Brand potatoes, an onion and butter!

INGREDIENTS FOR THE ROSTI

INGREDIENTS FOR THE HOLLANDAISE

  • 2 x organic egg yolks

  • 1 x tsp apple cider vinegar

  • 50g butter

OTHER INGREDIENTS

  • 3 x rashers of streaky bacon

  • 1 x organic egg

This make a serving for 1 person, just multiply the recipe by the amount of people you need to make them for.

METHOD

  • Place a pan of water on the stove and bring to a rolling simmer, not a boil. This will be for your poached eggs.

  • Cook the 3 rashers of streaky bacon in a non stick frying pan until crispy.

  • Wash and grate the potato length wise into a large bowl. You want the long strands of potato to make your rosti.

  • Grate half an onion into the large bowl as well.

  • Add a large pinch of salt and mix well.

  • Empty the contents of the bowl into a tea towel and twist, squeezing as hard as you can to remove as much liquid from the contents as possible. You’ll be amazed at the amount of water that does come out. Keep squeezing.

  • Once the bacon is cooked, remove from the frying pan and set aside.

  • Do not clean the frying pan, use this with all the bacon oil to cook your rosti’s in, it will impart more flavour.

  • Divide your mixture into 2 or 3 rosti’s and cook on one side until a crust has formed. Try not to flip them over before a crust has formed on the bottom, otherwise they will fall apart.

  • Once they are a light brown and look like they can last a flip, flip them over and cook the other side to a light brown.

  • Once both sides are light brown and the rosti’s are keeping their form, add some butter to the pan and really get them to crisp up and take on a lovely golden brown colour.

  • 10 minutes and they should be cooked. Remove them from the pan and set aside.

  • Do not clean the frying pan. Add the 50g of butter to the pan and let the butter melt. Do not put the pan on the heat; the residual heat from the pan will melt the butter glazing the pan and collecting the flavours from the bacon and the rosti’s.

  • In a bowl add two organic egg yolks and a teaspoon of apple cider vinegar. Start to whisk until it starts to thicken, then slowly start to add the butter to this egg mixture, continuously whisking. Once all the butter is added, whisk some more until the whole mixture is thoroughly combined and smooth. Hollandaise done.

  • In your pan of simmering water, swirl the water and add a splash of apple cider vinegar. Whilst the water is swirling, crack open an egg and let it slowly cook.

  • Once the poached egg is cooked to how you like it, its time to assemble.

  • Create a rosti stack or lay them side by side, pile on the bacon, place the poached egg on top and ladle the Hollandaise over the whole dish.

  • Enjoy!

Who needs an English Muffin when you can prepare and cook crispy buttery potato rosti’s in around 15 minutes. So the next time you want to impress someone, or you’ve run out of English Muffins but craving an Eggs Benny or you just don’t need the bread, think Potato Rosti!.
