RECIPE - Ultimate Potato Salad with Scotty Brand Potatoes

Scotland has some of the best produce in the world and I am so lucky to have the most insane amount of delicious-ness right on my doorstep.

With Perthshire not far from Edinburgh, I can be in the middle of lush strawberry and raspberry fields picking and eating these gorgeous sweet berries within 30 minutes. On the other hand we have potatoes from across Scotland, from Ayrshire to the Isle of Jura, from Airdrie to Easter Ross, which ever county I chose I could be tattie picking in less than an hour!

Not that I want to go Tattie picking! Luckily, we have a Scottish company that brings the Scottish larder straight to our supermarkets, Scotty Brand.

To celebrate National Potato Day on Friday 19th August 2022, I have created some ‘Food Hacks’ to help you prepare some amazing dishes in no time at all.

RECIPE FOR MY ULTIMATE POTATO SALAD USING SCOTTY BRAND POTATOES

This is my ultimate luxury potato salad. Sure, I don’t mind a shop bought one for convenience but when you see how easy it is to make this one and really elevate this simple dish, I doubt you’ll buy a shop bought one again.

I wanted to make this dish as quick and as easy as possible. There is very little in the way of cooking, and what cooking there is, is just for the potatoes. You should be able to whip this salad up in around 15 minutes.

This Ultimate Potato Salad is fantastic as a side dish for a barbeque, but it would equally sit very well as a delicious lunch for two.

I have used Scottish Langoustines that I purchased from the fishmonger and Scotty Brand potatoes and salmon; but you could use hot smoked salmon, prawns, mackerel etc. Although I have ‘poshed’ up this potato salad, it’s really all about the potatoes and getting them crispy, crunchy and golden brown!

INGREDIENTS

  • 3 x medium Scotty Brand potatoes

  • Mayonnaise

  • Dill

  • 100g x Smoked Salmon

  • 8 x Scottish Langoustines

  • 3 x Spring Onions

  • 1/4 of a Cucumber

  • Salt

This dish would serve 2 people for lunch or 4 people as a side dish.

METHOD

  • Wash and cube the potatoes. Try to keep the cubes all roughly the same size so that they cook evenly. Leave the skin on, it saves time.

  • Dont boil the potatoes, just bring them to a rolling simmer for approx 10 mins and remember to salt the water.

  • Whilst your tatties are simmering away, start to prep your salad ingredients. Roughly chop your dill, langoustines, smoked salmon and spring onions.

  • Once the potatoes are cooked, drain, then add them to a frying pan with butter to sauté for 5 minutes on a medium heat. Too high a heat and you’ll burn the butter. You’re looking for the potatoes to go crispy on the outside.

  • Once golden brown and crispy, lay out on a plate to cool down quicker and sprinkle dill over the top. The heat from the potatoes will draw in the flavour of the dill during this cooling process.

  • Whilst the potatoes are cooling or have cooled, in a bowl add a big dollop of mayonnaise (you can use as little or as much as you prefer here) then start to add your other ingredients, stirring and combining after each ingredient is added - you want each element of this dish to be coated in the mayonnaise or drowned in mayonnaise if that’s how you like it.

  • Add in the potatoes, cucumber, spring onion, salmon and lastly langoustine (keep 3 aside to garnish your salad at the end). Be gentle but mix well.

  • Spoon into your serving dish, garnish with the langoustines and some baby tomatoes or a slice of lemon would work too.

  • Enjoy!

This salad is super easy and the crispy potatoes are insane amongst the softer silkier textures. The flavour combination works so well, and every bite is a different delicious.
